Biscuiti cu ovaz si fulgi de ciocolata / Chocolate chip cookies with oats

Ingrediente / Ingredients:
(15 biscuiti / 15 cookies)
- 1 cup (85g) ovaz / 2 cup oats;
- 1 cup (128g) faina / 1 cup flour;
- 1/2 cup (115g) unt la temperatura camerei / 1/2 cup butter at room temperature;
- 1/3 cup (67g) zahar / 1/3 cup sugar;  
- 1/3 cup (67g) zahar brun / 1/3 brown sugar;
- 1 ou / 1 egg;
- 1 lingurita praf de copt / 1 tsp baking powder;
- 1 lingurita esenta de vanilie / 1 tsp vanilla extract;
- 1/2 lingurita sare / 1/2 tsp salt;
- 1/2 cup (50g) fulgi de ciocolata / 1/2 cup chocolate chips.


Ovazul se macina in blender pana cand are textura asemanatoare cu cea de faina.
Intr-un bol se mixeaza untul cu zaharul, apoi se adauga oul si se mixeaza in continuare pana cand se formeaza crema. Se adauga apoi ovazul macinat, sarea, praful de copt, esenta de vanilie si treptat faina.
La final se adauga fulgii de ciocolata si se amesteca bine.
Se formeaza bilute mici si se pun pe o foaie de copt. Se baga la cuptor, la foc mediu timp de 12-14 minute.
Se lasa sa se raceasca complet iniante de a-i servi.


First blend the oats until they become a flour.
In a bowl mix together the butter and sugar, then add the egg and mix until you obtain a cream. Then add the oat flour, salt, baking powder, vanilla extract and gradually add the flour.
At the end add the chocolate chips and mix well.
Form little balls and bake them on a parchment paper for 12-14 minutes.
Let them cool completely before serving.

Chiftele de orez cu pui si sos arrabiata / Arancini di riso with chicken and arrabiata sauce

Ingrediente / Ingredients:

Pentru chiftelele de orez / For arancini di riso:
- Orez / Rice;
- Ceapa / Onion;
- Telina verde / Celary;
- Condimente italienesti / Italian seasoning;
- Vin alb / White wine;
- Unt / Butter;
- Supa de pui / Chicken stock;
- Parmezan / Parmesan;
- 2 Oua / 2 Eggs;
- Mozzarella / Mozzarella
- Patrunjel / Parsley;
- Pesmet / Bread crumbs; 
- Sare si piper / Salt and pepper.

Pentru pui / For the chicken:
- Piept de pui file / Chicken fillets;
- Sare si piper / Salt and pepper;
- Condimente italienesti / Italian seasoning;
- Ulei de masline / Olive oil.

Pentru sosul arrabiata / For the arrabiata sauce:
- Ceapa / Onion;
- Usturoi / Garlic;
- Rosii pasate / Crushed tomatoes;
- Patrunjel / Parsley;
- Fulgi de ardei iute / Red pepper flakes;
- Sare / Salt.


I. Mai intai preparam risotto in alb. Preferabil cu cateva ore inainte de a face chiftelele, pentru a avea timp sa se raceasca.
Intr-o tigaie se topeste o lingura de unt si se adauga ceapa si telina tocate marunt. Se calesc timp de 2 minute apoi se adauga orezul si dupa inca 2 minute o jumatate de pahar de vin alb. Dupa ce vinul este absorbit de orez, se adauga un polonic de supa de pui, sare si piper si o lingurita de condimente italienesti, se amesteca pana cand este absorbita si apoi se adauga inca un polonic Se continua asa pana cand se termina supa de pui (600-700 ml).
Pentru a face chiftelele de orez se adauga peste risotto un ou batut, parmezan ras si patrunjel tocat marunt si se amesteca. Se ia cate o lingura din compozitie, se pune un cub de mozzarella in mijloc si se formeaza o mingiuta. Fiecare migiuta se trece printr-un ou batut si apoi se acopera cu pesmet. Se prajeste in  baie de ulei incins aproximativ 1 minut si apoi se lasa sa se scurga pe servetele de bucatarie din hartie.

First you have to prepare the risotto in bianco, preferably a fw hours before making the arancini di riso to have time to cool.
In a skillet melt a tbsp of butter and add the chopped onion and celary. Sote for 2 minutes then add the rice nd cook for another 2 minutes, then add half a glass of white wine. Once the wine is absorbed, you add ladle of chicken stock, salt and pepper, 1/2 tsp italian seasoning and stir until is absorbed. Then you continue this process until you finish the stock (600-700 ml).
To make the arancini di riso you have to mix the risotto with 1 beaten egg, grated parmesan and parsley. Take a spoonfull of the mixture, put a mozzarella cube in the middle the form a small ball. Coat each ball with a beaten egg then cover with bread crumbs. Deep fry them for 1 minute the let them cool on a paper towel.

II. Pieptul de pui se asezoneaza cu sare si piper, se presara putine condimente italienesti deasupra si prajeste aproximativ 2-3 minute pe fiecare parte intr-o tigaie cu putin ulei de masline.

Season the chicken fillets with salt, pepper and italian seasoning and fry 2-3 minutes on each side in a skillet with a little bit of olive oil.

III. Pentru sosul arrabiata se caleste putina ceapa si 2 catei de usturoi intr-o tigaie cu putin ulei de masline, se adauga 1/2 lingurita de fulge de ardei iute si 1 pahar de rosii pasate. Se lasa pe foc aproximativ 5 minute, iar la final se adauga putin patrunjel tocat.

For the arrabiata sauce saute onion and garlic in a skillet with a little bit of olive oil then add 1/2 tsp of red pepper flakes and 1 glass of crushed tomatoes. Cook for 5 minutes and at the end add some chopped parsley.

Serviti cu putin parmezan ras deasupra.
Serve with some grated parmesan on top.

Idee pentru o cina rapida: Paste cu pui, ciuperci si mazare / Quick dinner tip: Chicken, mushroom and peas pasta


Ingrediente / Ingredients:

- Piept de pui gatit / Cooked chicken breast;
Ciuperci / Mushrooms;
- Mazare congelata / Frozen peas;
- Paste (am folosit penne fara gluten, din porumb) / pasta (I used gluten free corn penne);
- Ceapa / Onion;
- Cub Maggi de pui / Maggi chicken stock cube;
- Amidon de porumb / Cornstarch;
- Branza cheddar / Cheddar cheese;
- Mirodenii (cimbru, salvie, maghiran, busuioc, chili) / Spices (thyme, sage, marjoran, basil, chili)
- Ulei de masline / Olive oil;
- Sare si piper / Salt and pepper.


Pastele se fierb conform instructiunilor de pe pachet in apa cu sare.
Intr-o tigaie se pune o lingura de ulei de masline si se calesc ceapa si ciupercile taiata fasii timp de 5 minute. Se asezoneaza cu sare, piper si mirodenii (cimbru, salvie, maghiran, busuioc, chili). Se adauga apoi mazarea si supa de pui obtinuta prin dizolvarea cubului Maggi. Dupa 3-4 minute adaugati 1/2 lingura de amidon de porumb si amestecati bine pentru a nu face cocoloase. Acesta va ajuta la ingrosarea sosului. Dupa ce sosul s-a omogenizat adaugati pieptul de pui gatit, taiat in cubulete si pastele.
Toata compozitia se pune intr-un vas termorezistent, se acopera cu branza cheddar rasa si se baga la cuptor pentru 15 minute.

Cook the pasta as per the package instructions in salted water.
In a skillet add 1 tbsp of olive oil and sote the sliced onion and mushrooms for 5 minutes. Season with salt, pepper and spices (thyme, sage, marjoran, basil, chili). Then add the peas and the Maggi chicken stock. After 3-4 minutes add 1/2 tbsp of cornstarch, mixing well. This will help thickening the sauce. Once the sauce is combined add the cooked chicken, cut into cubes and the pasta.
Pour this mixture in a heat proof dish, cover with grated cheddar cheese and cook in the oven for 15 minutes.

Chec cu mere / Apple cake

   Ingrediente / Ingredients:

- 1/2 cup (115g) unt la temperatura camerei / 1/2 cup butter at room temperature;
- 3/4 cup (170g) zahar / 3/4 cup sugar;
- 3 oua / 3 eggs;
- 2 lingurite esenta de vanilie / 2 tsp vanilla extract;
- 1 plic praf de copt / 1 package baking powder;
- coaja rasa lamaie si portocala / lemon and orange zest;
- 2 1/3 cups (260g) faina / 2 1/3 cups flour;
- 3/4 cup (170ml) lapte / 3/4 cup milk;
- 1/2 lingurita scortisoara / 1/2 tsp cinnamon;
- 1/2 lingurita sare / 1/2 tsp salt;
-  2 mere rase / 2 grated apples.


Intr-un bol pentru mixer se amesteca untul cu zaharul pana devine cremos, apoi se adauga coaja rasa de lamaie si de portocala, ouale, esenta de vanilie si laptele. Se adauga treptat cate o lingura de faina, iar la final praful de copt, merele si scortisoara.
Se pune compozitia intr-o tava de chec unsa cu putin unt si se baga la cuptor la foc mic spre mediu pentru 1 ora. Se lasa sa se raceasca complet inainte de a  servi.


In a mixing bowl cream together the butter and sugar then add the lemon and orange zest, eggs, vanilla extract and milk. Gradually add one tbsp of flour at a time and at the end, the baking powder, apples and cinnamon.
Pour the mixture in a baking pan lightly greased with sime butter and bake it in the oven at low to medium heat for 1 hour. Let it cool completely before serving.

Pui cu ciuperci si salata de quinoa cu spanac / Chicken and mushrooms with quinoa spinach salad

Ingrediente / Ingredients:

- Piept de pui gatit / Cooked chicken breast;
- Ciuperci / Mushrooms;
- Ceapa / Onion;
- Spanac / Spinach;
- Quinoa / Quinoa;
- Sos salsa / Salsa sauce;
- Condimente (maghiran, salvie, cimbru, rozmarin, busuioc) / Spices (marjoran, sage, thyme, rozmary, basil);
- Suc de lamaie / Lemon juice;
- Ulei de masline / Olive oil;
- Sare si piper / Salt and pepper.


Quinoa se gateste in felul urmator. Se spala sub un jet de apa rece apoi se adauga intr-o cratita si se acopera cu apa (la 1 cana de quinoa se adauga 2 cani de apa). Se pune 1/2 lingurita de sare si 1/2 lingurita de ulei de masline si se aseaza la foc mare pana cand da in clocot. Apoi se acopera cratita cu un capac si se lasa la foc mic pentru 15 minute.
Intr-o tigaie se pune o lingura de ulei de masline si se adauga apoi ceapa si ciupercile taiate fasii. Se condimenteaza cu sare, piper si se adauga cate 1/2 lingurita din fiecare mirodenie mentionata in lista de ingrediente. Se soteaza tip de 5-8 minute si apoi se adauga pieptul de pui deja gatit si se mai lasa pe foc aproximativ 3-5 minute.
Spanacul se spala si se taie in bucati maricele. Peste el se adauga quinoa gatita, 1 lingura de suc de lamaie, o lingurita de ulei de masline, sare si piper si se amesteca.
Am ales sa pun peste puiul cu ciuperci o lingura de sos de salsa pentru a-i da un gust picant :)

To cook quinoa, first rinse it unde cold water the add it to a pot with water (for 1 cup of quinoa add 2 cups of water). Add 1/2 tsp of salt and 1/2 tsp of olive oil and cook it on a high heat until the water starts to boil. Then cover with a lid and let it simmer on low heat for 15 minutes.
In a skillet add 1 tbsp of olive oil and the sliced onion and mushrooms. Add salt and pepper and 1/2 tsp of each spice mentioned in the ingredients list. Saute for 5-8 minutes then add the cooked chicken and cook for another 3-5 minutes.
Wash the spinach anb roughly chop it. Add it to a bowl with the quinoa, 1 tbsp of lemon juice, 1 tsp of olive oil, salt and pepper and mix.
I chose to put 1 tbsp of salsa sauce on the chicken with mushroom for a spicy taste.

Idee pentru o cina rapida: Orez chinezesc / Quick dinner tip: Chinese rice

Ingrediente / Ingredients:

- Piept de pui / Chicken breast;
- Ardei rosu si verde / Red and green bell pepper;
- Mazare congelata / Frozen peas;
- Morcov / Carrot;
- Ceapa / Onion;
- Orez gatit / Cooked Rice;
- Ou batut gatit / Scrambled egg;
- Usturoi / Garlic;
- Ghimbir / Ginger;
- Sos de soia / Soy sauce;
- Sos de peste / Fish sauce;
- sare si piper / Salt and pepper;
- Ulei de susan / Sesame oil.


Orezul trebuie fiert cu cel putin 2-3 ore inainte pentru a avea timp sa se raceasca. Se poate folosi si orez gatit cu o zi inainte si tinut la frigider.
Toate legumele se taie in cuburi mici, iar pieptul de pui se taie fasii subtiri.
Intr-o tigaie cu putin ulei de susan se prajesc feliile de pui pana cand se rumenesc. Apoi se scot din tigaie si se pun de-o parte. In aceeasi tigaie se mai adauga putin ulei de susan si se caleste ceapa timp de 1 minut apoi se adauga celelalte legume si se calesc timp de 3-4 minute. Peste legume se adauga oul bautut deja gatit, pieptul de pui, ghimbirul si usturoiul tocate marunt, o lingurita de sos de peste, 2 linguri de sos de soia, sare si piper dupa gust. Se adauga apoi orezul si se amesteca bine. Se serveste cald. Pofta buna!

The rice must be cooked at least 2-3 hours before so it has time to chill. You can also use rice cooked a day before and kept in the fridge over night.
All the vegetables must be cut into small cubes and the chicken in thin strips.
First, in a skillet with a little bit of sesame oil, fry the chicken until golden brown. Then remove it from the pan and set aside. In the same skillet add a little bit more sesame oil and cook the onion for 1 minute, then add the other vegetables and cook for another 3-4 minutes. Add the scrambled egg, the chicken, minced ginger and garlic, 1 tsp of fish sauce, 2 tbsp of soy sauce, salt and pepper to taste. Then add the rice and stir well. Serve while hot. Bon appetit!

Meniu pentru ziua surorii mele / Menu for my sister's birthday

Astazi a fost ziua de nastere a surorii mele ~ La muti ani, draga mea surioara!
Am fost pe la ea sa o ajut cu pregatirile pentru petrecere si astfel am innoit si bucataria din noua ei casuta :)
Meniul a fost simplu, rapid si gustos : pizza de casa (multumiri Mirunei pentru idee) si briose.

Today was my sister's birthday ~ Happy Birthday, my darling sis!
I helped her prepare the food for the party and cooked together in the kitchen of her new house :)
The menu was simple, fast and delicious: homemade pizza (thanks to Miruna for the idea) and muffins.

PIZZA 

 Ingrediente / Ingrediente:
- paine toast / toast bread slices;
- ciuperci / mushrooms;
- ardei rosu / red bell pepper;
- ceapa / onion;
- sunca / ham;
- oregano / dried oregano;
- busuioc / dried basil;
- lapte / milk;
- mozzarella rasa / grated mozzarella;
- ketchup / ketchup;
- sare si piper / salt and pepper.


Ciupercile, ardeiul, ceapa si sunca de taie in fasii si se amesteca impreuna cu oregano, busuioc, sare si piper.
Fiecare felie de painese inmoaie putin in lapte (doar pe o parte) si se aseaza intr-o tigaie pe o foaie de copt, cu partea umeda in sus. Feliile se aseaza lipite una langa alta iar deaspura lor se pune amestecul de legume cu sunca. Se acopera cu mozzarella si se baga la cuptor pentru 15-20 minute.

Cut the mushrooms, bell pepper, onion and ham into slices and mix them together with the oregano, basil, salt and pepper.
Dip one side of each slice of bread in milk and put it on a baking dish covered with parchment paper with the wet side up. Put all the slices one next to the other then cover them with the vegetables and ham mixture and mozzarella. Cook them in the oven for 15-20 minutes.

BRIOSE DE CACAO / COCOA MUFFINS

Ingrediente / Ingredients:
- 1/2 cup (115g) unt la temperatura camerei / 1/2 cup of butter at room temperature;
- 1 cup (225g) zahar tos / 1 cup granulated sugar;
- 1 ou / 1 egg;
- 1 lingurita esenta de vanilie / 1 tsp vanilla extract;
- 1/2 cup (60g) cacao / 1/2 cup cocoa powder;
- 1 cup (110g) faina / 1 cup flour;
- 1/4 lingurita sare / 1/4 tsp sare;
- 1 lingurita praf de copt / 1 tsp baking powder;
- 3/4 cup (170ml) lapte / 3/4 cup milk.

Se mixeaza untul cu zaharul 1-2 minute apoi se adauga oul si esenta de vanilie.
Intr-un bol separat se amesteca faina, cacao, sarea, praful de copt.
Peste compozitia de unt, zahar si ou se adauga jumatate din ingredientele uscate, se mixeaza 1 minut spoi se toarna jumatate din cantitatea de lapte, restul de ingrediente uscate, restul de lapte si se mixeaza 2 minute.

Mix the butter and sugar for 1-2 minutes then add the egg and vanilla extract.
In a separate bowl mix the flour with cocoa, salt and baking powder.
Over the butter, sugar and egg mixture add half of the dry ingredients and mix for 1 minute then add half of the milk, the rest of the dry ingredients and the rest of the milk and mix for 2 minutes.

 BRIOSE CU MERE SI SCORTISOARA / MUFFINS WITH APPLES AND CINNAMON

Ingrediente / Ingredients:
- 1/2 cup (115g) la temperatura camerei / 1/2 cup of butter at room temperature;
- 1 cup (225g) zahar tos / 1 cup granulated sugar;
- 2 oua / 2 eggs;
- 1 lingurita esenta de vanilie / 1 tsp vanilla extract;
- 2 lingurite scortisoara / 2 tsp cinnamon
- 1 1/3 cup (150g) faina / 1 1/3 cup flour;
- 1/4 lingurita sare / 1/4 tsp sare;
- 2 lingurite praf de copt / 2 tsp baking powder;
- 1/3 cup (80ml) lapte / 1/3 cup milk;
- 1 mar si jumatate / 1 and a half apple.

Pasii sunt aceiasi cu cei de mai devreme, insa in acest caz vom avea ca ingrediente uscate: faina, scortisoara, sarea, praful de copt.
La final adaugati merele taiate in cuburi mici si amestecati pana se incorporeaza in aluat.

The steps are the same as before, but in this case the dry ingredients are, flour, cinnamon, salt and baking powder.
In the end add the apple cut into small cubes and mix until well incorporated.


Ambele tipuri de aluat se aseaza in tava de briose si se coc in cuptor pentru 20-22 minute.
Pentru a avea niste briose pufoase nu amestecati prea mult aluatul.

Both types of batter must be put in a muffin tin and bake for 20-22 minutes.
To keep the muffins fluffy do not overmix the batter.

Supa Crema de Broccoli / Broccoli cream soup


Ingrediente / Ingredients:

- Broccoli / Broccoli;
- 1 Cartof / 1 Potato;
- 1 Ceapa mica / 1 Small onion;
- 1 catel de usturoi / 1 Clove of garlic;
- Parmezan / Parmesan;
- Boia iute / Chilli powder;
- 1 Cub Maggi de pui / Maggi chicken stock cube;
- Ulei de masline / Olive oil;
- Sare / Salt;
- Crutoane / Crutons;
- Fulgi de migdale / Almond flakes.


Intr-o tigaie cu o lingura de ulei de masline sa gateste ceapa si usturoiul timp de 2 minute. Se adauga apoi cartoful taiat cuburi si se acopera cu 750 ml de apa. Cand apa incepe sa fiarba se adauga cubul de pui Maggi, broccoli desfacut buchetele, 1 lingurita de boia iute si un pic de sare. Se acopera si se lasa la foc mic pentru 10-15 minute.

Se lasa se se raceasca apoi se pun toate legumele in blender si se adauga treptat cate un polonic de lichid pana cand supa crema are consistenta dorita.
Se serveste cu parmezan ras deasupra, crutoane si fulgi de migdale.


In a skillet with 1 tbsp of olive oil add the onion and garlic and cook for 2 minutes. Then add the cubed potato and cover with 750 ml of water. Once the water starts to boil add the Maggi chicken stock cube, the broccoli, 1 tsp of chilli powder and a little bit of salt. Cover and cook for 10-15 minutes.

Let it cool and then put the vegetables in a blender and add only one ladle at a time until the soup has the consistency that you like.
Serve with some graded parmesan on top, crutons and almond flakes.

Idee pentru o cina rapida: Piept de pui in sos de vin alb cu ciuperci / Quick dinner tip: Chicken breast in white wine and mushroom sauce

Ingrediente / Ingredients:

- Piept de pui file / Chicken breast fillets;
- Ciuperci / Mushrooms;
- Ceapa / Onion;
- Unt / Butter;
- Vin ab / White wine;
- 1 Cub Maggi de pui / Maggi chicken stock cube;
- Faina (2-3 linguri) / Flour (2-3 tablespoons);
- Cimbru / Thyme;
- Boia dulce / Sweet paprika;
- Usturoi granulat / Granulated garlic;
- Sare si piper / Salt and pepper.



Faina se amesteca cu toate condimentele: cimbru, boia dulce, usturoi granulat, sare si piper.
Intr-o tigaie se topeste un cub mai mare de unt la foc mic. Fiecare file de piept de pui se trece prin amestecul de faina si condimente, se scutura excesul si se pune in tigaia cu unt la foc mediu. Se calesc aproximativ 2-3 minute pe fiecare parte apoi se scot pe o farfurie si se lasa de-o parte.
In aceeasi tigaie, fara a pune unt in plus de adauga ceapa si ciupercile tocate marunt si se calesc timp de 2 minute Se toarna apoi putin vin, iar dupa ce se evapora alcoolul se adauga o cana de apa fierbinte in care ati dizolvat cubul de legume Maggi. Se lasa pe foc 2 minute apoi se adauga in sos feliile de piept de pui si se mai lasa inca 2-3 minute pe fiecare parte, pana se ingroasa un pic sosul.
Eu am servit cu niste couscous. Pofta buna! :)

First you must mix the flour with all the condiments: thyme, sweet paprika, granulated garlic, salt and pepper.
In a skillet add a big cube of butter and melt on a low heat. Then put each chiken fillet in the flour mixture, shake off the excess add them in the skillet on a medium heat. Cook for 2-3 minutes on each side, then remove them and set aside.
In the same skillet, without adding any more butter, add the chopped onion and mushrooms and cook for 2 minutes. Add some white wine and after the alcohol is evaporated, add 1 cup of hot water with the chicken stock cube disoved in it. Leave it for another 2 minutes then add the chicken fillets and cook for 2-3 minutes on each side, until the sauce thickens.
I served with some couscous. Bon appetit!

Idee pentru o cina rapida: Enchilada de pui / Quick dinner tip: Chicken enchilada

Ingrediente / Ingredients:

- Piept de pui / Chicken breast
- Ardei rosu / Red bell pepper
- Ceapa / Onion
- Smantana / Sour cream
- Sos de rosii / Tomato sauce
- Branza cheddar / Cheddar cheese
- Tortilla / Tortilla
- Ulei de rapita / Canola oil
- Boia iute / Chili powder
- Oregano / Oregano
- Sare / Salt


Pieptul de pui se taie in bucati mici, ardeiul se taie in cubulete, iar branza cheddar se da pe razuitoare.
Intr-o cratita se adauga o lingura de ulei de rapita si se caleste ceapa timp de 2 minute. Se adauga apoi ppieptu de pui taiat cubulete si se rumeneste bine pe toate partile (8-10 minute). Se adauga apoi ardeiul, iar dupa 2-3 minute 1 cana de sos de rosii, o jumatate de cana de apa, 1ingurita de boia iute, o lingurita de oregano si 1/2 lingurita de sare. Se amesteca bine si se lasa la foc mediu timp de 10 minute. Se adauga apoi 2 linguri de smantana si se amesteca pana sosu se omogenizeaza.
Dupa ce se ia de pe foc, se separa pieptul de pui si ardeiul de sos. Pe o tortilla se aseaza 2 linguri de compozitie, se presara putina branza cheddar si se impatureste (la fel ca aici: http://inthemoodtocook.blogspot.ro/2013/10/burrito-de-curcan-cu-salsa-turkey.html). Toate tortilla impachetate se aseaza intr-un vas de yena, se toarna peste sosul de rosii cu smantana si se acopera cu restul de branza cheddar. Se baga la cuptor pentru 30 minute a foc mediu.
O cina delicioasa gata intr-o ora. Eu am presarat putin patrunjel deasupra, pentru culoare.

First you must cut the chicken and red bell pepper in cubes and shred the cheddar cheese.
In a skillet add 1 tbl spoon of canola oil and the onion and cook for 2 minutes. Add the chicken and cook well on all sides until slightly brown (8-10 minutes). Add the red bell pepper and cook for another 2-3 minutes then add 1 cup of tomato sauce, 1/2 cup of water, 1 tsp of chili powder, 1 tsp of oregano, 1/2 tsp of salt and mix well. Leave it on medium heat for 10 minutes. Add 2 tbs of sour cream and stir.
After you remove if from the stove, separate the chicken and pepper mixture from the sauce. On a tortilla add 2 tbs of the misture, sprinkle some cheddar cheese and fold (like it's done here: http://inthemoodtocook.blogspot.ro/2013/10/burrito-de-curcan-cu-salsa-turkey.html). Put all the folded tortillas in an oven safe dish, cover with the sauce and the shredded cheddar cheese and cook in the oven for 30 minutes on medium heat.
There you go - a deicious dinner in only an hour. I sprinkled some parsley on top for a little bit of colour.

Supa crema de ciuperci cu dovlecei / Mushroom and zucchini soup


Ingrediente / Ingredients:

- ciuperci / mushrooms
- dovecel / zucchini
- ceapa / onion
- 1 cub de legume Maggi / Maggi vegetable stock cube
- cimbru / thyme
- foi de dafin / bay leaves 
- boia iute / chili powder
- ulei de masline / olive oil
- sare si piper / salt and pepper
- 1/2 pahar cu lapte / 1/2 glass of milk


Se caleste ceapa in putin uei de masline timp de 1-2 minute. Apoi se adauga dovlecelul si ciupercile taiate in cuburi mici si se soteaza timp de 5 minute. Se adauga apoi toate condimentele: 1 lingurita de cimbru, 1 lingurita de boia iute, sare si piper, 2 foi de dafin si se acopera cu apa. Cand da in clocot, se adauga cubul de legume, se amesteca si se acopera. Se fierbe a foc mic timp de 20-30 minute, pana cand legumele sunt moi.
Se lasa se se raceasca 10-15 minute apoi se adauga toate legumele in bender, impreuna cu laptele, fara lichidul in care au fiert legumele (indepartati foile de dafin inainte). Se adauga treptat cate un polonic de ichid pana cand supa crema are consistenta dorita.
Eu am servit cu crutoane si fugi de migdale.
Apropo, in ciuda culorii data de ciuperci, supa este delicioasa :)

First sote the onion in a itte bit of olive oil, for 1-2 minutes. Then add the diced zucchini and mushrooms and sote for another 5 minutes. Add the condiments: 1tsp thyme, 1 tsp chili powder, sat and pepper, 2 bay leaves and cover with water. Bring to a boil and then add the vegetabe stock cube, stir and cover with a lid. Let it simmer for 20-30 minutes, until the vegetables soften. Let it cool for 10-15 minutes then add the vegetables to a bender and the milk, without the stock (after removing the bay leaves). Add only one ladle at time until the soup has the consistency that you like.
I served with crutons and almond fakes.
By the way, despite the colour that the mushrooms gave to the soup, it's delicious :)

Pranz mexican / Mexican lunch

Nu stiu de ce, dar cateodata am pofta de mancare mexicana delicioasa si picanta. Am gasit in Auchan sos salsa si tortilla chips si am asamblat acest pranz pentru astazi :)
I don't know why but once in a while I'm in the mod for some delicious and spicy mexican food. I found some salsa sauce and tortilla chips in Auchan so I put together this lunch for today :)


Ingrediente / Ingredients:
- carne tocata de curcan gatita in stil mexican / ground turkey cooked in mexican style; 
- fasole rosie / red kidney beans;
- sos salsa / salsa sauce;
- tortilla chips / tortilla chips
- ceapa verde / green onion;
- salata / salad;
- rosie taiate cuburi / diced tomato;
- avocado / avocado;
- lamaie / lemon;
- ulei de masline / olive oil;
- sare si piper / salt and pepper.

Carnea tocata de curcan se amesteca bine cu fasolea si se serveste cu putin de sos salsa desupra. Puteti pune sos si pe tortilla chips, daca doriti.
Intr-un castron adaugati rosiile, salata, ceapa tocata marunt si avocado taiat cubulete, se adauga sucul de le 1/2 lamaie , ulei de masline, sare si piper si se amesteca bine Se serveste pe o farfurie impreuna cu tortilla chips si carnea tocata.
Mix the ground turkey with the red kidney beans and serve with salsa sauce on top. Also, put some sauce on the tortilla chips if you like.
In a bowl add the diced tomatoes, green onion, salad and cubed avocado, add the juice from half a lemon, olive oil, salt and pepper and mix well. Serve on a plate with the meat and tortilla chips.

Cupcakes cu morcovi si crema de branza / Carrot cupcakes and cheese cream

Asa cum v-am promis, ceva dulce :)
As promised, something sweet :)

Ingrediente / Ingredients:
- 280 grame faina / 280 grams flour;
- 1/2 plic praf de copt / 1/2 pack baking powder;
- 1 lingurita scortisoara / 1 tsp cinnamon;
- 180 grame zahar brun / 180 grams brown sugar;
- 100 grame unt / 100 grams butter;
- 3 oua / 3 eggs;
- 3 morcovi dati pe razuioare / 3 shredded carrots;
- 1 praf de sare / 1 pinch of salt;
- 140 ml. iaurt / 140 ml yogurt;
- 1 lingurita esenta de vanilie / 1 tsp vanilla extract.


Pentru crema de branza / for the cheese cream:
- 200 grame crema de branza / 200 grams cream cheese;
- coaja rasa de la o lamaie / 1 lemon's zest;
- zeama de la 1/2 lamaie/ juice from 1/2 lemon;
- 1 lingurita esenta de vanilie / 1 tsp vanilla extract;
- 75 grame zahar pudra / 75 grams powder sugar;
- 1 lingurita amidon de porumb / 1 tsp corn starch.

Pentru aluat se amesteca cu mixerul zaharul, untul topit, ouale, iaurtul si esenta de vanilie. Se adauga apoi faina, praful de copt, sarea si scortisoara si se mixeaza pana se inglobeaza toata faina. Se adauga apoi morcovii dati pe razuitoare si se amesteca bine.
Pentru crema de branza sa amesteca bine cu mixerul toate ingredientele.
In formele de cupcakes am pus un strat de aluat, un strat de crema de branza si apoi inca un strat de aluat.
Am lasat la cuptorul preincalzit pentru 25 minute. Delicios!
 

 

For the batter mix the sugar, melted butter, eggs, yogurt and vanilla extract. Then add the flour, baking powder, salt and cinnamon and mix until well combined. Then add the shredded carrots and mix well.
For the cheese cream you only have to mix together all the ingredients.
In the cupcake cups add one a layer of batter, one of cheese cream and another one of batter. Then bake for 25 minutes. Delicious!

Idee pentru o cina rapida: Somon cu piure si mazare cu sos de iaurt cu usturoi / Quick dinner tip: Salmon with mashed potatoes and peas with yogurt and garlic sauce

M-am gandit ca, pe langa retetele mai mult sau mai putin complicate pe care le public pe blog sa mai adaug un nou format - Idee pentru o cina rapida, pentru acele zile cand nu prea ai chef sau timp sa stai prea mult in bucatarie.
Prima idee pentru o cina rapida este: Somon cu piure, mazare si sos de iaurt cu usturoi.
I have this idea to include on my blog, apart from the more or less complicated recipes, a new format - Quick dinner tip, for those days when you are not in the mood or don't have time to spend a lot of time in the kitchen.
The first tip I have is: Salmon with mashed potatoes and peas with yogurt and garlic sauce.


Ingrediente / Ingredients:
- somon / salmon;
- cartofi / potatoes;
- mazare congelata / frozen peas;
- iaurt / yogurt;
- usturoi / garlic;
- unt / butter;
- lapte / milk;
- ulei de masline / olive oil;
- sare si piper / salt and pepper.


Mai intai am curatat cartofii, i-am taiat in cubulete mici si i-am pus la fiert. Au fost gata in aproximativ 20 minute. Apoi i-am pasat, am adaugat un cubulet de unt, lapte, sare si am amestecat bine.
Intre timp am calit somonul in putin unt, cate 4-5 minute pe fiecare parte.
Mazarea am fiert-o timp de 8 minute in apa cu sare.
Sosul l-am facut cu iaurt, 4 catei de usturoi, ulei de masline, sare si piper.
Totul a fost gata in 25 minute :)
First I pealed the potatoes, cut them into small cubes and put them in boiling water. They were ready in about 20 minutes. Then, I mashed them, added a small cue of butter, milk, salt and mixed well. 
In the meantime I cooked the salmon in some butter, 4-5 minutes on each side.
I cooked the peas in salty water for 8 minutes.
Then I made the sauce with yogurt, 4 cloves of garlin, olive oil, salt and pepper.
Everything was ready in 25 minutes :)

Burrito de curcan cu salsa / Turkey burrito and salsa

A trecut aproape o luna de cand nu am mai postat o reteta. Am luat o mica pauza si am fost in concediu in minunata Italia <3
Astazi ma intorc cu o delicioasa reteta mexicana. Sper sa va placa :)
It's been almost a month since I've last shared a recipe. I took a little break and went on holiday in beautiful Italy <3
Now I'm back with a delicious mexican dish. Hope you like it :)

Ingrediente / Ingredients:
- Carne tocata de curcan / Ground turkey;
- Branza cheddar / Cheddar cheese;
- Mozzarella / Mozarella;
- Fasole rosie / Red kidney beans;
- Rosii cherry / Chery tomatoes;
- Sos de rosii / Tomato sauce;
- Ceapa / Onion;
- Lime / Lime;
- Usturoi / Garlic;
- Ardei iute / Jalapeno;
- Tortilla / Trtilla;
- Sare si piper / Salt and pepper;
- Chimen si cimbru / cumin and thyme;
- Ulei de masline / Olive oil.


Intr-o tigaie se pune o lingura de ulei de masline si se adauga carnea tocata de curcan. Dupa ce este aproape gata se adauga ceapa si ardeiul iute si se amesteca. Se adauga apoi sosul de rosii, chimen, cimbru, sare si pier, se amesteca bine si se mai lasa pe foc inca 5-10 minute, pana se rumeneste bine carnea.

Fasolea se paseaza un pic pentru a avea consitenta unei paste, iar cele doua tipuri de branza se dau pe razuitoare.
In a skillet with 1 tablespoon of olive oil add the ground turkey. When ita almost done add the onion and jalapeno and stir. Then add the tomato sauce, cumin, thyme, salt and pepper and stir well. Cook for another 5-10 minutes until the meat starts to brown.
The red kidney beans must be mashed so they almost form a paste and the two types of cheese must be grated.
 


Britto se asambleaza astfel: pe o tortilla se aseaza putina branza, apoi pasta de fasole, carnea tocata, din nou branza si se impatureste. In mod normal buritto se prajeste in ulei, insa eu am preferat sa le bag la cuptor - 10 minute pe fiecare parte.

The you assemble the burrito: on a tortilla add some cheese, then the beans paste, the ground turkey and some more cheese then fold. Usually the burritos are fried but I opted to bake them for 10 minutes on each side.
 

 

 

Pentru salsa, am tocat marunt rosii cherry, ceapa, usturoi si ardei iute, am asezonat cu sare piper si am presarat ulei de masline si suc de lime. Pofta buna!
For the salse I choped the tomatoes, onion, garlic and jalapeno the seasoned with salt and pepper and aded olive oil and lime juice. Bon appetit!

Quinoa si legume sote / Quinoa and sauteed vegetables

Puteti folosi orice fel de legume doriti. Asta este versiunea mea :)
You can use any kind of vegetables that you want. This is just my version :)




Ingrediente / Ingredients:
- 1 vanata / 1 eggplant;
- 1 ardei galben / 1 yellow pepper;
- 1 ceapa / 1 onion;
- 8 rosii cherry / 8 cherry tomatoes;
- 3 catei de usturoi / 3 cloves of garlic;
- 1 cana quinoa / 1 cup quinoa;
- mozzarella rasa / grated mozzarella
- patrunjel / parsley;
- ulei de masline / olive oil;
- sare si piper / salt and pepper.





Quinoa se fierbe asemanator cu orezul. Pentru o cana de quinoa se adauga 2 cani de apa si se pun la foc mare pana cand apa da in clocot Apoi se acopera si se mai lasa la foc mic timp de 15 minute.

Vanata si ardeiul se taie cubulete iat rosiile cherry se taie pe jumatate.
Intr-o tigaie se pune o lingura de ulei de masline si se caleste timp de 2 minute ceapa tocata marunt. Se adauga apoi usturoiul pisat si legumele si si seteaza timp de 8-10 minute. Se adauga apoi rosiile si se mai soteaza inca 5 minute. La final se adaga si patrunjelul si se amesteca.
Am servit cu rondele de castravete :)

 

 

You must cook the quinoa as you would cook the rice. For one cup of quinoa add 2 cups of water. Bring to a boil on high heat and then simmer for 15 minutes.\
Cut the eggplant and pepper in small cubes and cut the cherry tomatoes in half.
Sote the chopped onion in 1 tablespoon of olive oil for 2 minutes then add the crushed garlic and the vegetables and cote for anothe 8-10 minutes. Then add the tomatoes and cook for 5 more minutes Finally add the chopped parsley and stir.
I served with sliced cucumber.

Lasagna cu legume / Veggie lasagna

Ingrediente / Ingredients:
- Foi de lasagna / lasagna noodles;
- ciuperci / mushrooms;
- dovlecel / zucchini;
- broccoli / broccoli;
- ardei galben / yellow pepper;
- ceapa / onion;
- usturoi / garlic;
- ricotta / ricotta;
- rosii pasate / crushed tomatoes;
- ou / egg;
- parmezan / parmesan;
- ulei de masline / olive oil;
- sare si piper / salt and pepper;
- Busuioc si oregano / basil and oregano.



Toate legumele se taie cubulete si se calesc 3-5 minute intr-o tigaie cu 1 lingura de ulei de masline.

Cand incep sa se inmoaie se adauga un pahar de rosii pasate cu putina apa, sare, piper, bucuios si oregano si se lasa pe foc timp de 10-15 minute.
Cut all the vegetable in small cubes and sote them for 3-5 minutes in a skillet with 1 tablespoon of olive oil.
Once they start to soften, add one glass of crushed tomatoes and a little bit of water, salt, pepper, asil and oregano and cook for 10-15 minutes.


 

Intr-un castron se face crema de branza: ricotta, un ou intreg si parmezan ras.
In a bowl prepare the cheese cream: ricotta, one whole egg and grated parmezan.

 

Se unge un vas de yena cu putin ulei de masline si se pune un pic de sos pe fundul vasului. Apoi se urmeaza pasii de mai jos:
1. foi de lasagna (ale mele nu necesitau fierbere inainte);
2. se intinde un strat uniform de crema de branza;
3. apoi un strat de legume cu sos de rosii;
4. un pic de parmezan ras deaspura
5. Se repeta iar la final se pun doar foi de lasagna si crema de branza
Se lasa la cuptor 20 minute acoperit su folie de aluminiu si inca 20 minute descoperit. 
E o lasagna delicioasa! :)

 

 

Grease a baking dish with a little bit of olive oi and add a little bit of tomato sauce. Then follow the below steps:
1. lasagna noodles (I used oven ready ones)
2. one layer of cheese cream;
3. one layer of vegetables and tomato sauce;
4. a little bit of parmesan;
5. repeat this and finish with lasagna noodles and a thin layer of cheese cream.
Leave it in the oven for 20 minutes covered with aluminum foil and other 20 minutes uncovered.
It's a delicios lasagna :)
